French toast muffins! Yes, this recipe is exactly what you hope and dream it is.
When I ran across this recipe for french toast muffins I knew I was on to something really, truly great. See those little chunks up on the top of each muffin? They are pieces of cinnamon bread that have been soaked in the egg batter and then plunked on the top of the muffin batter, so they cook up as little heavenly pieces of actual french toast right on top of your french toast flavored muffin. Baked Oatmeal Cups– So many mornings we are running late for school and I will quickly throw instant oatmeal into the microwave…no more! My kids LOVE these and they can choose whatever toppings/flavors they want.
You can eat them like a muffin for an easy grab-and-go breakfast or you can eat them like oatmeal by simply putting in a bowl and stirring in a little warm milk. I store leftovers in the freezer, take one out the night before to thaw in the fridge and reheat in the microwave for about 60 seconds. Head over to A La Graham for this great recipe.
Quinoa Berry Bliss Bites- I had quinoa left over from making my Quinoa Omelette Breakfast Cups and wanted to make a quick-to-grab quinoa style muffin with the sweetness of my fresh berries! These turned out awesome!
These are just sweet enough to help with cravings yet are clean enough to be an everyday snack. If your quinoa is cooked and ready to go this is a really simple, fast recipe. I absolutely love the texture and the flavor of these Quinoa Bliss Bites. I know you will too! Head over to Damy Health for this great breakfast recipe.
Healthy Egg Muffins– These are so easy to make. First, preheat your oven to 350 degrees F. Prepare some silicon muffin tins with non-stick cooking spray and set them aside.
Beat some eggs (I usually use about one egg per muffin) and add some seasoning to them (we just like a pinch of salt). Chop up the ingredients you want to add to the egg muffins. We like either ham, green onions and grated cheddar cheese or cooked & crumbled bacon, diced spinach and cheddar cheese. Head over to The DIY Mommy for this great recipe!
Practically fat free? Yes. Some of my favorite muffin recipes could easily be considered dessert. Nothing wrong with that, but if I’m not looking to indulge one morning, I’d like a healthier option. I used unsweetened applesauce in my muffins in lieu of butter or oil. I love using applesauce to replace fat in baked recipes. It keeps your baked good soft and moist, while keeping it low in fat. I call this “Meal-in-a-Muffin Pan.” The entire meal is made all at the same time in a 12-cup muffin pan. In fact, you can make this unbelievably easy meal in about 20 minutes with only 4 ingredients!
You will need a bag of shredded hash brown potatoes. These can usually be found in the refrigerated section of your grocery store, near the eggs. Which is convenient, because you will also need seven eggs for this meal. Finally, pick up a box of corn muffin mix. One of the eggs will be used for these muffins, as well as 1/3 cup of milk. These Pancake Muffins with Sausage are drizzled with warm maple syrup and perfect breakfast for hectic mornings! My version of Pancake Muffins is made from scratch but you can also make them with pancake mix and sub in any of your favorites in place of the sausage – bacon, blueberries, you name it!
Your kids will love these super delicious pancake muffins with little bits of sausage, drizzled with maple syrup! These pancake muffins heat up really great as leftovers, so make a big double batch if your family will want to eat them all week long for breakfast. Serve with some fruit on the side and you have a super simple breakfast! Head over to Center Cook for this great recipe.
Broccoli & Sun-Dried Tomato Egg Cups made with Egg Whites. When they come out of the oven, these little yummies are melt-in-your-mouth, or they can be frozen and re-heated for a quick breakfast on the go. Perfect for me and my crazy lifestyle.
I love a good breakfast. No really, breakfast is like my most favorite meal of the day. So much so, that I’ve been known to go about eating breakfast for other meals for a week (or more). It’s just such a versatile meal–sweet, savory or somewhere in-between, breakfast just rocks. Head over to Totally the Bomb for this perfect morning breakfast recipe.
Fat-Free Strawberry Banana Muffins– Today I bring you moist, soft strawberry banana muffins that are completely FAT FREE and only 90 calories each. And yet, they are SO flavorful. The secret: mashed bananas, applesauce, and fresh sweet strawberries.
I love the portion control of muffins. Grabbing a couple while I’m out the door to the office is just so much easier than taking the time to pour cereal and milk. I’m not even sure how something fat free could taste so flavorful, but these truly do! Head over to Sally’s Baking Addiction for this incredible and guilt free recipe everyone will love.
Mini Corn Dog Muffins are a fun and unique snack recipe for any special or ordinary occasion! These poppable, sweet and crispy cornbread bites with salty, all-beef hot dogs taste exactly like a state fair corn dog in a teeny-tiny package.
A schmear of cold ketchup really sends the corn dog flavor over the top. I can’t get over how insane these are. I literally had to pry Ben’s fingers from the mini muffin tin. Once he popped, he could not stop! These are amazing served straight out of the oven, but can be made ahead of time, stored in the refrigerator, and microwaved for 30 seconds or so when it’s kickoff time. They taste just as good reheated. Not that I nuked five today and would know or anything. Head over to Iowa Girl Eats for this great recipe.
Fruit and Yogurt Granola Cups– Here is a great idea for serving a healthy and easy dish at a brunch or breakfast. It’s a Granola Cup with yogurt and fresh berries. This would also be great to serve at a baby shower or bridal shower. You can make each cup for everyones taste with different flavored yogurts, various kinds of fruits, add nuts etc. You can find the recipe for this at Udi’s Gluten Free.
